Adelphi Fine Chocolate was founded by Sarah Donovan, who has more than 20 years’ experience in the chocolate industry. Sarah honed her craft in Australia and New Zealand and was the head chocolatier for She Universe until deciding to start her own business.

Adelphi Fine Chocolate has a diverse flavour portfolio of luxurious, fresh, handcrafted chocolate truffles. With a range of traditional and contemporary fillings, the truffles melt in your mouth with their whipped chocolate creams, ganache, caramels and pralines.
Adelphi does not use any artificial colours, flavours or preservatives.
How did your brand come about?
Adelphi was created because of a passion for natural, fair trade chocolate and a desire to have unlimited imagination when it comes to flavour.
Is there a story behind the name?
The name means brothers/siblings in Greek and has ties to my father and his brothers who grew up in the Adelphi Hotel in Kaikoura, which was demolished after the 2016 earthquake.
What is a typical day for you like?
Chocolate making is always spread over two days. The first is the preparation and piping of the fillings that need time to set. The second is for hand-dipping and decorating the truffles.
Favourite flavour in the range?
This is always changing depending on what is new, or my mood, or the season, however my standard go-to is always passionfruit. I love fruit flavours with chocolate.
Most unusual flavour/ingredient?
The most unusual ingredient, according to customers, is the miso truffle. It adds a slightly salty hint and brings an umami element, which enhances all the chocolatey goodness.
Do you have a fun chocolate fact?
The word chocolate comes from the Aztec word "xocoatl", which referred to the bitter drink the Aztecs made from cacao beans.
What do you love most about the Arts Centre Mākete?
The interaction with people who love chocolate and are from all over New Zealand and the world, and being a part of the mākete community, which is made up of so many wonderfully diverse, talented and creative people.
